There are three classifications of coffee dependent on elevation:
Stictly High Grown: 1,200 meters and up.
High Grown: between 900 and 1,200 meters.
Central Standard: between 600 and 900 meters.
El Salvador began exporting coffee in 1865 and to this day, it is still cultivated by hand. Arabica coffee is the main variety grown. The current shift in coffee production is one of sustainablity for the environment by protecting the remaining forested areas of the country. With programs like The Rainforest Alliance Certified Farms and Organic Certification, the country has raised the bar in terms of quality and marketability. Production yields continue to increase every year.
